Louisiana Red Beans and Rice

- Rinse beans and soak in a large pot of water overnight. Add oil to CanCooker and cook onion, bell pepper, garlic, and celery over medium heat for 3 to 4 minutes. Rinse beans and add to CanCooker along with 6 cups of water. Season with bay leaves, cayenne pepper, thyme, sage, parsley and Creole seasoning. Latch lid and bring to a boil, then reduce to medium low heat. Simmer for 2 ½ hours. Remove from heat and carefully remove lid. Add sausage, latch lid and return to heat. Simmer for an additional 30 minutes. After adding the sausage, prepare the rice. In a second CanCooker or saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

- 4 cups Water
- 2 cups Long Grain White Rice
