- Melt 2 tablespoons of butter in any non-stick CanCooker over medium low heat and saute onion and mushrooms. Toss in the fresh spinach and let wilt. While the vegetables are cooking down, crack eggs into a bowl and mix together with the Creole seasoning, pepper and milk. Pour in the egg mixture and cook until eggs are light and fluffy. Serve warm and Enjoy!You can double this recipe and also add or substitute any other veggies.

- 1 cup Mushrooms
- 1 cup Onions
- 2 cups Fresh Spinach
