Wild Turkey Stuffed Peppers

- Using a non-stick CanCooker JR or Companion, place onto a burner using medium low heat. Combine wild turkey, salt, pepper and 1/4 cup of water and cook until water is evaporated, breaking up ground turkey into small pieces.Transfer turkey to a bowl, and combine with 1/2 cup of diced red bell pepper, 1/2 cup of frozen corn, 1/2 cup of Ro-Tel tomatoes, 1/2 cup of black olives, half-package of taco seasoning, shredded cheese and 1/4 cup of water.Slice tops off red bell peppers, reserving tops, and discard pith and seeds. Fill peppers with the turkey mixture and sprinkle with parsley. Place rack in CanCooker and fill with 16 oz of water, then put peppers inside CanCooker, cut-side up. Cover with bell pepper “lids,” heat until CanCooker is steaming and cook for 20-30 minutes.

- Chopped Parsley
