Ingredients
- 4 Tbsp unsalted butter
- 2 Tbsp olive oil
- ½ lb. sliced baby portobello mushrooms
- 1 small onion – finely chopped
- 1 carton (32 oz) chicken broth
- 1 cup water
- 1 ½ cups uncooked arborio rice
- ½ cup white wine or chicken broth
- 1 Tbsp lemon juice
- 2 cups boneless skinless chicken thighs – cut in strips
- 3 Tbsp grated Parmesan cheese
- 2 Tbsp fresh parsley – minced

1 ½ tsp CanCooker Butter Garlic Salt

Directions
- In any CanCooker on a medium-to-medium low heat add butter and olive oil.
- Add onions and chicken and cook for 10 minutes or until chicken is no longer pink.
- Add mushrooms and rice and sauté for 1-2 minutes until fully coated.
- Stir in wine, lemon juice and chicken broth.
- Place lid on CanCooker and steam for 30 minutes, stirring occasionally to keep rice from sticking to the bottom.
- Add cheese, parsley and CanCooker Butter Garlic Salt and continue to cook until heated through.
- Serve immediately.
