Pineapple Pudding Cake

- Spray mini loaf pans with non-stick cooking spray. Mix the cake according to the instructions on the box. Pour batter into the loaf pans until approximately 2/3 full. lace the2-piece rack into any CanCooker and add 12 ounces of water. Place two loaf pans onto the rack. On a medium-to-medium low heat source steam the cakes with the lid on for 30 minutes or until toothpick in center comes out clean. Remove the cakes from the CanCooker and repeat with the other two loaves.
- While the cakes are steaming, with a mixer whisk milk and pudding mix for two minutes. Let stand 2 minutes or until the mixture is soft set.
- Add softened cream cheese and pineapple to the pudding mixture and blend until smooth.
- When the cakes have cooled, spread the pudding mixture evenly over the cake. Apply whipped topping over the pudding mixture. Sprinkle with walnuts and cherries. Refrigerate until serving.

- 1 1 oz. pkg instant vanilla pudding mix
- 1 8 oz. pkg cream cheese
- 10 oz. crushed pineapple
- 1 8 oz. carton whipped topping
- 1/4 cup walnuts
- 4 mini disposable loaf pans
- Maraschino Cherries
