Italian Breakfast Frittata

- In any non-stick CanCooker on a medium low heat add olive oil, onion and garlic and cook 5 minutes or until it is translucent. Add the arugula and cook for 1 minute until fragrant. Stir in tomatoes and roasted peppers. In a separate bowl mix eggs, milk, salt, pepper, Italian seasoning and mozzarella cheese. Reduce heat to low and pour egg mixture into the CanCooker, mix well with content already inside and close lid and let cook for 5-8 minutes. Check eggs to see if they are fully cooked if not continue to cook for another 2-3 minutes. Remove carefully, sprinkle with Parmesan cheese and serve immediately.
