- Cut cod fillet to desired size pieces and season with salt and pepper on both sides.
- In a medium bowl combine flour and parmesan cheese.
- Dip cod fillets into flour and cheese mixture and shake off any excess flour.
- In any CanCooker on a medium-to-medium low heat source add the olive oil and cod fillets.
- Cook on each side for about 5 minutes until brown.
- Transfer cooked fillets to a plate.
- Melt the butter and add garlic, sauté for 30 seconds.
- Add in the heavy cream and chicken broth, stirring occasionally.
- In a small bowl mix together corn starch and 1 tablespoon of the Piccata sauce.
- Add the mixture to the CanCooker and whisk until thickened.
- Add lemon juice, capers and season the sauce with salt and pepper.
- Add cod back to the Cancooker and cook until warmed through.
- Sprinkle the cod Piccata with parsley and serve.
