Chocolate Mint Cake

- Mix cake mix according to package directions. Grease mini loaf pans and fill half way up with cake batter. In any size CanCooker place rack in the bottom of the CanCooker and add water to the top of the rack. Bring water to a steam and place cakes on top of rack. Steam cakes for thirty minutes or until toothpick comes out clean. Repeat until all batter is used up (yields 6 mini cakes).While the cakes are steaming mix together frosting ingredients in a medium size bowl until smooth. Carefully remove cakes from the CanCooker and let cool (place in freezer for 5-10 minutes to speed up cooling). Once cooled layer frosting on each cake.In a small bowl microwave chocolate chips and butter until smooth. Add peppermint extract to the melted chocolate mixture and stir until well blended. Pour melted chocolate mint topping mixture over frosted cakes and refrigerate until chocolate has set. Enjoy!
