Cannon Swordfish

Cannon Swordfish

 

INGREDIENTS:

2 pounds new potatoes, quartered

1-2 onions, quartered

12 half ears of corn, placed on end

1 bag of baby carrots

2 cups chopped peppers

1-2 pounds of large, fresh un-pealed shrimp

1 lb scallops

6 swordfish steaks

 Old Bay Seasoning

Louisiana Cajun Seasoning

2 Beers

2 cups cooking wine

 

First, place in the CanCooker ears of corn standing on end. Add potatoes, carrots, onions and peppers.  Season vegetables with Old Bay Seasoning.  Add your liquid – 2 cans of beer and 2 cups of cooking wine. Latch the lid and place on heat source.  Cook for approx 30 minutes.  Open lid and place in the Swordfish , shrimp and scallops.  Season with Louisiana Cajun Seasoning.    Cook for an additional 15-20 minutes (approx)      Remove from heat source and let stand for a minimum of 5 to10-minutes. Place food into large serving tray and enjoy.

 

****Always spray the inside of the CanCooker with Non Stick cooking spray before you add contents.

Tuna Noodle Casserole

Tuna Noodle Casserole: (Feeds 10-12)

 

Ingredients:

2 gallons of water

8-10 Cans of Tuna

(2) 1lb bags of egg noodles

1 large onion chopped ½ inch

1 large green pepper chopped ½ inch

1 stick of butter

1 bag of frozen peas

Salt and Pepper

8 oz of Shredded Colby

8 oz of Shredder Cheddar

2 tbs of garlic minced

Nonstick Spray

¼ cup of vegetable oil

 

Directions:

Place CanCooker on Medium-High heat

2 gallons of water bring to boil

Add ¼ cup of vegetable oil

2 tbs of salt

Add Egg noodles

Boil Noodle until el dente

Strain Noodles removing all water

Spray nonstick spray inside of CanCooker liberally

Turn CanCooker to low heat

Add Butter

Sautee onion and green pepper until translucent

Add noodles back into CanCooker

Mix

Add Tuna

Mix

Add Cheese and Frozen Peas

Mix

Add 2 tbs of black pepper

Mix

On low heat, put lid on and let rest for 2-3 minutes

Uncle Millie’s Fish Stew

Uncle Millie’s Fish Stew

 

 

Ingredients:

  • (4lbs)Fillet of salmon (cubed chunks 1 inch)
  • (3) Cans of Clams
  • (1lb) of white fish sausage  and/or Andouillette sausage
  • (3lbs) potatoes ½ inch cubes 
  • 2 sticks of celery (chopped ½ inch)
  • 1 large green pepper (chopped ½ inch)
  • 1 large Onion (chopped ½ inch)
  • 2 quarts of chick stock
  • 4 quarts of water
  •  2 cups of powders nondairy creamer
  • 2tbs pepper
  • 1tbs salt
  • 1 stick of butter

 

 

Directions:

In the CanCooker;

Set the heat to low,

Melt 1 stick of butter

Add onion, green peppers, celery let sauté until translucent

Add chicken stock and water

Add potatoes

Place lid on and turn heat to medium for 10-12 minutes CanCooker should be steaming

Turn heat to low, Remove lid carefully

Add nondairy creamer, salt and pepper (stir for 1 minute)

Add Clams (juice and all)

Add Whitefish sausage

Add salmon

Place lid back on and turn to medium until it starts to steam for 5 minutes

Turn back to low, take lid off

 

Uncle Millie Suggestion: Try CanCookers Butter Garlic or Original Creole to enhance recipe

 

Feeds 10-12 people

SONJA’S SHRIMP AND SAUSAGE SUPPER

INGREDIENTS:

2 pounds new potatoes, quartered
1-2 onions, quartered
12 half ears of corn, placed on end
2 lemons cut in half
1-2 pounds of large, fresh un-pealed shrimp
1 package of kielbasa sausage, whole
4-3 oz. packages of shrimp or crab seasoning
CanCooker All Purpose Seasoning
1-stick of butter 1 or 2 12 oz. liquid (water or beer)
 
First, place in the CanCooker ears of corn standing on end. Add potatoes, onions and lemons. Place kielbasa on top of vegetables. Add shrimp or crab boil seasoning, All purpose seasoning, butter and beer (or water). Latch the lid and place on heat source. Once the cooker begins to vent steam, keep on heat source for additional 25-30 minutes (approx).
 
CAREFULLY open lid and add shrimp. COOKER AND CONTENTS WILL BE HOT. USE OVEN MITTS. Re-latch lid and cook for an additional 5- 10 minutes. Remove from heat source and let stand for a minimum of 5 to10- minutes. Place food into large serving tray and enjoy.

Live Lobster Recipe

INGREDIENTS:
 
2 Medium Live Lobsters
1/3 bottle white wine Sea Salt
 

Fill CanCooker with 1/3 bottle of white wine and a few shakes of sea salt. Latch the lid and place on heat source. Once steam begins to vent, carefully with tongs add live lobsters and cook for 12-14 minutes (approx.). Remove from heat using oven mitts and let cool for a minimum of 5-minutes. Use tongs to remove lobsters from CanCooker.

Steamed Mussels Recipe

INGREDIENTS:

2 lbs Mussels
White wine
2 cloves finely minced garlic
1⁄4 tsp sea salt
1 tbsp CanCooker Butter Garlic Salt
1 tbsp of Garlic Pepper Seasoning
1 stick of sweet cream butter
 
Fill CanCooker with 1 inch of white wine. Add garlic, seasonings, and butter. Latch the lid and place on heat source. Once steam begins to vent, carefully with tongs add mussels and steam for 4-5 minutes. (approx.). Remove from heat using oven mitts and let cool for a minimum of 5-minutes. Use tongs to remove mussels.

One Pot Clambake

Ingredients:

2 large onions, quartered
20 small red potatoes
8 ears corn on the cob, cut in half
1-2 sausage rings (polish kielbasa, etc)
2 lemons, quartered
Fresh seafood (use all or any combo of the following: clams, mussels, small lobster tails, shrimp, scallops, prawn)
1 stick butter
8 garlic cloves, minced
Seasoning: fresh ground pepper, sea salt, red pepper flakes, dried herbs
2 cups white wine
6 cups chicken broth
First place in the CanCooker ears of corn standing on end. Add potatoes, onion and lemon. Place sausage on top of vegetables. Add seasonings, garlic, and butter. Pour the white wine and chicken broth over ingredients. Latch lid and put on heat source. Once lid begins to vent steam, keep on heat source for 35 minutes (approx). Carefully open lid and add fresh seafood starting with items that take the longest to cook, shrimp should go into the cooker last. Let steam for additional 5-10 minutes. Remove from heat and let stand for a minimum of 5 to10 minutes. Place food into large serving tray and enjoy. Serve with plenty of hearty crusty bread.

CanCooker Crab-Legs

INGREDIENTS:

5 lbs Snow Crab or King Crab
Crab- boil seasoning
CanCooker Butter Garlic Salt
2 lemons ( 1 squeezed for lemon juice/ other for lemon wedges)
Butter (melted)
Water
 
Fill CanCooker 1⁄4 full with water. Add crab boil seasoning, CanCooker Butter Garlic Salt and lemon juice. Latch the lid and place on heat source. Once steam begins to vent, carefully with tongs add crab legs and cook for 8 minutes (approx.). Remove from heat using oven mitts and let cool for a minimum of 5- minutes. Use tongs to remove crab legs from CanCooker. Serve hot with melted butter and lemon wedges.
 
 

FISH BOIL RECIPE

INGREDIENTS:

10 new potatoes, medium washed and cut in half
5 med onions, peeled
3 lbs. shrimp, peeled and de-veined
2 lbs. Salmon or any fish you like, washed cut in 2 inch lengths
6 ears corn, cleaned cut in small pieces
2 lbs lean sausage, cut in 2 inch lengths
1 Old Bay Crab boil pack
1 Case of Beer, one for the pot the rest for your guests
1 stick butter Old Bay seasoning
Step 1, Place 4 Qts. of water and a can of Beer in your Can Cooker with 2 Tbsp. sea salt with the Old Bay Crab Boil pack. Step 2, Place Potatoes, Onions, Corn and Sausage in the Can Cooker and lock lid down, Cook for 20 minutes.
Step 3, Remove lid SLOWLY with hot mitts, place Shrimp and Fish in Can Cooker, Cook for another 10 minutes. Step4, melt butter in a sauce pan and set a side Step 5, Remove lid SLOWLY with hot mitts and drain, place in a dish or tin foil pan large enough to hold all food items.
Step 6, pour melted butter over all food items and sprinkle with Old Bay seasoning ENJOY

Prep time 15 minutes cook time 30 minutes makes 8 large servings

Callen family seafood recipe

INGREDIENTS:

12 half ears of corn, placed on end

Head of Broccoli

2 lemons cut in half & squeezed

1 pounds of large, fresh uncooked shrimp

1 lb crab legs

1 lb scallops

Lobster tails or scampi

Salt/pepper

CanCooker All Purpose Seasoning

Fresh or dried basil

½ -stick of butter or butter substitute

1 can of beer

12 oz white wine

12 oz water

 

First, place in the CanCooker ears of corn standing on end. Add broccoli

heads. Place in crab legs, lobster tails, scallops and uncooked shrimp.

Add seasonings, butter and lemons (halved & squeezed) Pour in the beer,

white wine and water. Latch the lid and place on heat source. Once the

cooker begins to vent steam, keep on heat source for 30 minutes. Remove

from heat source and let stand for a minimum of 5 to10-minutes. Place food

into large serving tray and enjoy.
