Party Meatballs Recipe

Party meatballs

Ingredients:
2 lbs. Frozen Meatballs
1 can Bavarian Style Sauerkraut
1 jar Heinz chili sauce
1 can whole berry cranberry sauce
½ can beer

Spray inside CanCooker with nonstick cooking spray. Add all the ingredients, latch lid and cook on low/medium temperature for 45 minutes. Turn off the heat and let stand with lid on for 5 minutes. ENJOY!!!

Lemon-Poppy Seed Bread

Lemon Poppy Seed Bread

INGREDIENTS:
¾ Cup Milk
¼ Cup Vegetable Oil
2 Eggs
Box of Lemon – Poppy Seed Muffin Mix (pouch of lemon glaze)

Stir Lemon-Poppy Seed Mix, milk, oil and eggs in medium bowl just until blended (batter may be lumpy) Grease miniature loaf pans and pour batter into pans approx 2/3 full. Place rack in the bottom of the CanCooker or CanCooker Jr and add water to the top of the rack. Place 2 pans of batter on top of the rack. Place lid on and steam for 30 minutes.
Remove and let cool.
Drizzle lemon glaze over loafs.

NOTE***
You will need to use miniature loaf pans (we used aluminum disposable ones) Size 5-1/2 inches long X 3-1/2 inches wide X 2 inches deep. Only 2 pans will be able to fit into CanCooker at a time.

This recipe will yield 4 loafs.

Make batter ahead of time and place in storage container for easier use at campsite, etc.

Grandpa Leo’s Fall off the Bone Baby Back Ribs

Grandpa Leo’s Fall off the Bone Baby Back ribs

Ingredients:

6 Full Racks of Pork Baby Back Ribs (cut in half)
64 oz Apple Juice
Rib Rub
BBQ Sauce

Rib Rub recipe:
9 TBSP Brown Sugar
4.5 TBSP Paprika
4.5 TBSP Salt
4.5 TBSP Ground Black Pepper
3 Tsp Garlic Powder

Mix Rib Rub ingredients together and rub into pork ribs, allow ribs to marinate overnight.

BBQ Sauce:
2 cups Honey
2 cups Heinz 57 sauce

1. Spray inside of CanCooker with non stick cooking spray
2. Place 4 opened mini soda cans on bottom of the cooker. Cans must be opened and refilled with water. DO NOT PUT UNOPENED cans in cooker. (this is to raise the rack off the bottom of the can)
3. Place rack on top of cans
4. Place ribs on top of the rack. Layer ribs.
5. Pour in apple juice – fill up to the rack, you do not want ribs sitting in the apple juice.
6. Lock lid and place on low to med heat source – once you see steam cook for an additional 1 ½ hours.
7. Open the lid and remove the ribs
8. Place ribs on the grill, baste with BBQ sauce and grill for 30 minutes.

Cowboy Chili

Cowboy Chili

Feeds 10-12

 

 

Ingredients:

5lbs of ½ beef or wild game of your choice

2 large onions (Chopped 1/2inch)

Large green pepper (Chopped 1/2inch)

2 Large cans of crushed tomatoes

2 heaping tbsp of minced garlic

¼ cup of chili powder

¼ cup of cumin

3 large cans of kidney beans

1 gallon of water

½ cup of vegetable oil

2 tbsp or so to your taste of salt and pepper          

 

 

Directions:

In your CanCooker on medium heat sauté meat in oil along with salt pepper, garlic, green pepper, onion

Once sautéed add water

Put lid and let cook on medium heat for 30-40 minutes

Add beans, cumin, tomatoes, and chili powder

Stir together

Put lid on Cook for 30 minutes on low heat

 

Please note Handles may be hot, please use oven mitts when handling

Bean Soup

Bean Soup

Feeds 10-12

 

Ingredients:

 

1 gallon of water

2 quarts chicken stock

1 large onion (Chopped 1/2inch)

1 bag of carrots (Chopped 1/2inch)

2 stalks of celery (Chopped 1/2inch)

3 jars of white northern beans

1 cup vegetable oil

1 stick of butter

2tbs of dried mint

2 tbs of minced garlic

3tbs of pepper

2tbs of salt

2 Hungarian hot peppers (Chopped 1/2inch)

 

Directions:

Place CanCooker on Medium heat source and melt butter then add Vegetable Oil

Put in Onion, Carrots, Celery, Garlic, Pepper, Salt and Pepper, and Mint

Stir until semi-soft

Add water, chicken stock and beans

Stir ingredients together

Put Lid on Turn heat to low

Let simmer for 20-25 minutes

 

Handles may be hot, please use oven mitts when handling.

Uncle Millie’s Beef and Noodles

Uncle Millie’s Beef and Noodles

Servers: 8-10

 

Ingredients:

5 lbs of Roast (Wild Game or Beef)

1 Large Onion chopped 1 inch

1 Green Pepper chopped 1 inch

2 lbs of Carrots diced ½ inch

2 bulbs of garlic peeled and coarse chopped

1 tablespoon of salt

1tablespoon of pepper

1 stick of butter

1 Large bag of wide egg noodles

1 gallon of water

1 pack of onion soup mix

 

 

Directions:

Place CanCooker on heat source, melt 1 stick of butter on low to medium heat

Add Onion, Green Pepper, Garlic, Salt, Carrots, and Pepper

Sautee

Add Roast- brown roast

Add Onion soup mix

Add Water

Place Lid on Cancooker and  cook for 1hour and 15 minutes

After 1hour 15 minutes check to see if it is fork tender (easily falling apart) if not cook a little longer checking every 10 minutes

Add Noodles

Put lid on and cook for 10-15 minutes

Add additional salt and pepper for taste if needed

Uncle Millie’s Wild Turkey Chili

Uncle Millie’s Wild Turkey Chili

Serves 8-10

 

 

 

Ingredients:

 

2 Wild Turkey Breast (may substituted with 4-6 chicken breasts )

1 Large Onion Chopped 1 inch

1 Large Green Pepper Chopped 1 inch

3 Large Carrots Chopped 1/2 inch chunks

2 Jalapeno  sliced ¼ inch rings

2 quarts chicken broth

3 quarts water

2 large jars of white northern beans

2 tablespoons of minced garlic

4-5 tablespoons cumin spice

2 tablespoons of salt

2tablespoons of pepper

1 can diced tomatoes

1 stick of butter

 

 

Directions:

CanCooker on low-medium heat

Melt butter

Put in onion, green pepper, garlic, carrots, jalapenos, salt, pepper, and cumin

Sauté until translucent

AddTurkey

Turn CanCooker to Medium  heat

Stir until turkey starts to brown

Add Chicken Broth

Add Water

Bring to Boil

Put CanCooker lid on Cook for 45minutes

Reduce heat to Low, Take lid off

Add northern beans

Fold in tomatoes

Put lid back on

Let CanCooker do its magic for 15 more minutes

 

YUM YUM Enjoy!

 

 

Millie’s Fettuccini Alfredo

Millie’s Fettuccini Alfredo

 

INGREDIENTS:

 

½ Gallon of Water

1 tbsp of Salt

2 boxes of fettuccini Noodles

2 sticks of butter

2 wedges grated 6-8 oz parmesan cheese each

2 wedges grated 6-8 oz romano cheese each

2 heaping tbsp of minced garlic

2 tbsp of coarse black pepper

2 cups of Milk

1 cup Flour

 

Directions:

 

Fill CanCooker with water, add salt.  Place on heat source and bring water to a boil.  Add 2 boxes of Fettuccini noodles, cook noodles for approx 10 minutes til ½ the way done. (Don’t worry you cant mess it up)

Carefully strain the noodles and drain the water from the CanCooker.  Place CanCooker back on heat source and melt the butter on low to medium low.  Add garlic and 1 tbsp pepper.  Stir and cook for 1-2 min.  Add noodles back into the CanCooker.  Add in half of the 2 cheeses (fold into noodles).  In a separate bowl combine milk, flour, and 1 tbsp of pepper.  Add mixture to CanCoooker and stir.  Add the remainder of cheese and fold gently into noodles 6 times.  Put lid on CanCooker and heat and cook on low for 2 minutes.  Remove from heat and let stand for 10 minutes.  Empty into serving bowl and Enjoy!  

Campstyle Bread Pudding

Campstyle Bread Pudding: (Serves 8)

 

Ingredients:

 

2 large loaves of white bread dried

2 cups of heavy whole milk

2 tbs of vanilla extract

1 stick of butter melted

4 large eggs

½ cup of raisins

½ of chopped pecans

Salt and Pepper

¼ cup brown sugar

½ cup white sugar

CanCooker Grate (see CanCooker Accessories for grate)

Mini Bread Loaf Pans

Nonstick Spray

 

Directions:

 

Crumble bread into a mixing bowl

Add milk, vanilla, eggs, raisins, pecans, and butter to bowl

Dash of pepper and salt

Mix thoroughly

Ingredients should be loose not stiff thicker than pancake batter

Add Grate to bottom of CanCooker

Pour water into CanCooker to 1 inch

Spray mini loaf pans with nonstick spray

Pour mixture of equal amounts in mini loaf pans

Place loaf pans on grate inside of CanCooker

Put lid on

Turn CanCooker to low to medium heat

Cook to you see steam and time out an additional 8 minutes after seeing steam

Remove lid carefully

Check with tooth pick (poking the center of the loath with tooth pick and should come out clean)

-If tooth pick does not come out clean cook for additional 3-5 minutes and check again-

Tuna Noodle Casserole

Tuna Noodle Casserole: (Feeds 10-12)

 

Ingredients:

2 gallons of water

8-10 Cans of Tuna

(2) 1lb bags of egg noodles

1 large onion chopped ½ inch

1 large green pepper chopped ½ inch

1 stick of butter

1 bag of frozen peas

Salt and Pepper

8 oz of Shredded Colby

8 oz of Shredder Cheddar

2 tbs of garlic minced

Nonstick Spray

¼ cup of vegetable oil

 

Directions:

Place CanCooker on Medium-High heat

2 gallons of water bring to boil

Add ¼ cup of vegetable oil

2 tbs of salt

Add Egg noodles

Boil Noodle until el dente

Strain Noodles removing all water

Spray nonstick spray inside of CanCooker liberally

Turn CanCooker to low heat

Add Butter

Sautee onion and green pepper until translucent

Add noodles back into CanCooker

Mix

Add Tuna

Mix

Add Cheese and Frozen Peas

Mix

Add 2 tbs of black pepper

Mix

On low heat, put lid on and let rest for 2-3 minutes
