Cannon Swordfish

Cannon Swordfish

 

INGREDIENTS:

2 pounds new potatoes, quartered

1-2 onions, quartered

12 half ears of corn, placed on end

1 bag of baby carrots

2 cups chopped peppers

1-2 pounds of large, fresh un-pealed shrimp

1 lb scallops

6 swordfish steaks

 Old Bay Seasoning

Louisiana Cajun Seasoning

2 Beers

2 cups cooking wine

 

First, place in the CanCooker ears of corn standing on end. Add potatoes, carrots, onions and peppers.  Season vegetables with Old Bay Seasoning.  Add your liquid – 2 cans of beer and 2 cups of cooking wine. Latch the lid and place on heat source.  Cook for approx 30 minutes.  Open lid and place in the Swordfish , shrimp and scallops.  Season with Louisiana Cajun Seasoning.    Cook for an additional 15-20 minutes (approx)      Remove from heat source and let stand for a minimum of 5 to10-minutes. Place food into large serving tray and enjoy.

Campstyle Bread Pudding

Campstyle Bread Pudding: (Serves 8)

 

Ingredients:

 

2 large loaves of white bread dried

2 cups of heavy whole milk

2 tbs of vanilla extract

1 stick of butter melted

4 large eggs

½ cup of raisins

½ of chopped pecans

Salt and Pepper

¼ cup brown sugar

½ cup white sugar

CanCooker Grate (see CanCooker Accessories for grate)

Mini Bread Loaf Pans

Nonstick Spray

 

Directions:

 

Crumble bread into a mixing bowl

Add milk, vanilla, eggs, raisins, pecans, and butter to bowl

Dash of pepper and salt

Mix thoroughly

Ingredients should be loose not stiff thicker than pancake batter

Add Grate to bottom of CanCooker

Pour water into CanCooker to 1 inch

Spray mini loaf pans with nonstick spray

Pour mixture of equal amounts in mini loaf pans

Place loaf pans on grate inside of CanCooker

Put lid on

Turn CanCooker to low to medium heat

Cook to you see steam and time out an additional 8 minutes after seeing steam

Remove lid carefully

Check with tooth pick (poking the center of the loath with tooth pick and should come out clean)

-If tooth pick does not come out clean cook for additional 3-5 minutes and check again-

Tuna Noodle Casserole

Tuna Noodle Casserole: (Feeds 10-12)

 

Ingredients:

2 gallons of water

8-10 Cans of Tuna

(2) 1lb bags of egg noodles

1 large onion chopped ½ inch

1 large green pepper chopped ½ inch

1 stick of butter

1 bag of frozen peas

Salt and Pepper

8 oz of Shredded Colby

8 oz of Shredder Cheddar

2 tbs of garlic minced

Nonstick Spray

¼ cup of vegetable oil

 

Directions:

Place CanCooker on Medium-High heat

2 gallons of water bring to boil

Add ¼ cup of vegetable oil

2 tbs of salt

Add Egg noodles

Boil Noodle until el dente

Strain Noodles removing all water

Spray nonstick spray inside of CanCooker liberally

Turn CanCooker to low heat

Add Butter

Sautee onion and green pepper until translucent

Add noodles back into CanCooker

Mix

Add Tuna

Mix

Add Cheese and Frozen Peas

Mix

Add 2 tbs of black pepper

Mix

On low heat, put lid on and let rest for 2-3 minutes

 

Enjoy!

Olive Burger Supreme

Olive Burger Supreme: (Feeds 8-10)

Ingredients:

8lbs of wild game burger or hamburger

1 large onion chopped ½ inch

1 large green pepper chopped ½ inch

1 large stick of Velveeta Cheese Chopped 1inch cubes

1 large jar of green olives chopped

Salt and Pepper

Vegetable Oil

Hamburger Buns

Nonstick Spray

 

Directions:

Spray inside CanCooker with nonstick spray (liberally)

On low heat, Add quarter cup of Vegetable Oil

Add Onions and Green Pepper

Stir until softened

Add burger (Chop and crumble to a medium size burger) stir until brown adding salt and pepper to taste

Put lid on and cook for 3-4minutes

Add cubes of Velveeta and fold into meat

Put CanCooker Lid on and let cook for 2 minutes

Take lid off and check meat while stirring (do not burn)

Strain Olives removing all juice from jar

Mix Olives with burger and cheese

Serve on buns

Uncle Millie’s Fish Stew

Uncle Millie’s Fish Stew

 

 

Ingredients:

  • (4lbs)Fillet of salmon (cubed chunks 1 inch)
  • (3) Cans of Clams
  • (1lb) of white fish sausage  and/or Andouillette sausage
  • (3lbs) potatoes ½ inch cubes 
  • 2 sticks of celery (chopped ½ inch)
  • 1 large green pepper (chopped ½ inch)
  • 1 large Onion (chopped ½ inch)
  • 2 quarts of chick stock
  • 4 quarts of water
  •  2 cups of powders nondairy creamer
  • 2tbs pepper
  • 1tbs salt
  • 1 stick of butter

 

 

Directions:

In the CanCooker;

Set the heat to low,

Melt 1 stick of butter

Add onion, green peppers, celery let sauté until translucent

Add chicken stock and water

Add potatoes

Place lid on and turn heat to medium for 10-12 minutes CanCooker should be steaming

Turn heat to low, Remove lid carefully

Add nondairy creamer, salt and pepper (stir for 1 minute)

Add Clams (juice and all)

Add Whitefish sausage

Add salmon

Place lid back on and turn to medium until it starts to steam for 5 minutes

Turn back to low, take lid off

 

Uncle Millie Suggestion: Try CanCookers Butter Garlic or Original Creole to enhance recipe

 

Feeds 10-12 people

Chocolate Steam Cake

INGREDIENTS:

1 c. cocoa

1 c. Sugar

1 c. evaporated milk

1 c. vegetable oil

1 c. hot boiled water

2 c. all purpose flour

4 eggs

3 tsp. vanilla

1 tsp. baking soda

1 tsp. baking powder

 

Place cocoa and sugar into large mixing bowl, add boiled water and stir. Add all other ingredients and mix well. Grease miniature loaf pans and pour batter into pans approx 2/3 full. Place crumpled up tinfoil in bottom of cooker , so pans can sit 3-4 inches off of bottom of cooker. (you do not want pans floating in the water) Add 4-5 cups of water then place 2 mini loaf pans into CanCooker and steam 30 minutes.

 

NOTE*** You will need to use miniature loaf pans (we used aluminum disposable ones) Size 5-1/2 inches long X 3-1/2 inches wide X 2 inches deep. Only 2 pans will be able to fit into CanCooker at a time.

 

To make a base for pans to sit on, crumple up large pieces of tinfoil to fill bottom of cooker 3-4 inches high. This way you have a “rack” for pans to sit on. You do not want the loaf pans floating in the water.

 

This recipe will yield 4 loafs.

 

Make batter ahead of time and place in storage container for easier use at campsite, etc.

Favorite recipe

INGREDIENTS:

10-12 ears of corn on the cob, cut in half or use whole corn with shuck ( remove silk )

10-15 potatoes, washed and cut in half

2 onions, quartered

12 carrots, cut into 3 or 4-inch lengths

1 head cabbage, quartered

1 bunch of asparagus ( or other vegetable )

12 bratwursts or other sausage types. Try venison, pork loin, chicken breast, roast

1 or 2 12 oz. liquid ( water or beer )

1-2 sticks of butter ( or margarine, olive oil )

CanCooker Original Seasoned Salt

CanCooker Onion Pepper Seasoning

Or use your favorite dressing or marinade.

 

Layer corn standing on end, add potatoes, onions, vegetables, cabbage and meat into the CanCooker in the order listed. Pour in beer ( or water ) and season with CanCooker seasoning. Add marinades and butter. Latch lid and place on heat source ( camp fire, propane burner ). Once lid begins to vent steam, keep on heat source for 40-minutes ( approx. ) or until done. Remove from heat and let stand for a minimum of 5 to 10 minutes. Place into large serving dish and enjoy!

Can Kabobs

INGREDIENTS:

2 Chicken Breasts cut into large bite size pieces

2 Sirloin Steaks cut into large bite size pieces

8 new red potatoes quartered

1 green bell pepper cut into chunks

1 red bell pepper cut into chunks

1 or 2 onions quartered

1 packaged button mushrooms

1 small zucchini squash cut into chunks Fresh garlic

2 Tablespoons lemon juice

CanCooker Original Seasoned salt

CanCooker Onion Pepper Seasoning

2 Tbsp soy sauce

2 Tbsp Worcestershire

1 stick of butter (optional)

12 oz. liquid (bottled water or beer)

 

First place in the CanCooker potatoes, pepper, onion, mushrooms and squash. Place chicken and steak on top of vegetables. Add garlic, lemon juice, seasonings, soy, Worcestershire and butter. Last add the water (or beer). Latch the lid and place on heat source. Once steam begins to vent, keep on heat source for 40-minutes (approx.). Remove from heat using oven mitts and let cool for a minimum of 5-minutes. Pour out contents into a large serving tray and enjoy.

Gunnar’s Campfire Stew

INGREDIENTS:

2 1⁄2 pounds lean beef stew meat, cut in 1–inch cubes

6 medium potatoes quartered

1 or 2 onions quartered 1 bag baby carrots

6 ribs celery, cut into 1-inch chunks

2 cloves garlic, minced

CanCooker Original Seasoned Salt

CanCooker Onion Pepper Seasoning

1 stick of butter (optional)

1 can tomato sauce

1⁄2 can beef broth

1 can beer

 

First place in the CanCooker potatoes, carrots, onion and celery. Place stew meat on top of vegetables. Add garlic, seasonings and butter. Last add tomato sauce, beef broth and beer. Latch the lid and place on heat source. Once steam begins to vent, keep on heat source for 40-minutes (approx.). Remove from heat using oven mitts and let coolfor a minimum of 5- minutes. Pour out contents into a large serving tray. Serve with warm bread.

Anita’s favorite cancooker meal

Anita’s favorite cancooker meal

INGREDIENTS:

2 pounds new potatoes, quartered

1 bag baby carrots

1 head of broccoli florets

1 head cauliflower florets

1-2 pounds of large, fresh un-pealed shrimp

1 package of kielbasa sausage, whole

CanCooker All Purpose Seasoning

Lemon pepper marinate

1-stick of butter Fresh garlic

2 12 oz. George Killian’s Irish Red beer

 

Layer potatoes, carrots, stick of butter, fresh garlic and spices. Place kielbasa on top of vegetables. Pour in one bottle of George Killians Irish Red beer. Latch the lid and place on heat source. Once the cooker begins to vent steam, keep on heat source for additional 20 – 25 minutes (approx). CAREFULLY open lid …COOKER AND CONTENTS WILL BE HOT. USE OVEN MITTS. Add shrimp marinated in lemon pepper, broccoli and cauliflower florets. Add other bottle of beer. Re-latch lid and cook for an additional 10 – 15 minutes. Remove from heat source and let stand for a minimum of 5 to10-minutes. Place food into large serving tray and enjoy.
